Local Bakery Adopts AI to Cut Food Waste
SweetBite Bakery, a popular chain in Seoul, has introduced a new artificial intelligence (AI) system to predict daily demand for its baked goods.
The bakery collaborated with FoodMind Analytics, a start-up specializing in sustainable food management, to launch the system earlier this month.
Before the change, SweetBite often overproduced pastries to avoid running out during busy hours.
According to store manager Hana Yoo, nearly 15% of products were discarded daily due to inaccurate sales predictions.
The new AI software analyzes weather data, past sales records, and even local event schedules to estimate how many croissants, muffins, and sandwiches should be baked each day.
Since its introduction, food waste has dropped by over 40%, and overall ingredient costs have decreased by 12%.
Customers have also reported fresher products because items are baked more frequently in smaller batches.
CEO Minho Park stated that if the pilot program continues to perform well, SweetBite will expand it to all 24 branches by the end of the year.
He added, “Technology isn’t replacing our bakers—it’s helping them make smarter decisions that are better for both business and the environment.”
